"Nobody has done this, to my knowledge," Against the Grain Managing Member Sam Cruz told Eater in a recent phone conversation about the brewery's collaboration this Thursday, November 21 with Chef de Cuisine Micah Melton of Chicago's The Aviary. "Beer as an experience, as a cocktail can be an experience." The Aviary/ATG intersection began when Cruz and other ATG folk visited The Aviary on the advice of Evil Twin gypsy brewer Jeppe Jarnit-Bjergsø. The gang met Melton, who Cruz said came to their table and expressed admiration for their brews. "It was an honor because we're at a swanky cocktail joint, such a cool place to get respect," he said. How will The Aviary's avant-garde, Alinea-esque approach to cocktails translate to the hoppy hipster haven of ATG? While wishing to keep certain details secret, Cruz promised "presentation will be very interesting, the beer itself will be an interesting experience." Cruz also told Eater "Micah will also create three unique cocktails that pair with the beer we'll produce."
