Hillbilly Tea has been a hit in Shanghai since its March opening. Now the 30-square-foot space is the No. 1 brunch spot in a city of more than 23 million people. Owner Karter Louis tells Leo Weekly he credits the success of Hillbilly Tea Shanghai (the name translates as "Bumpkin Tea Tavern") to "the universal appeal of soul food...there's something about the spirit of the food that touches you and brings you joy."
