To kick off Burger Week 2013, Eater Louisville asked some local burger purveyors, "how much meat, lettuce, ketchup, bread, etc. restaurants or food trucks with popular burgers go through in a week." Here's the burger-by-numbers breakdown:
Grind Gourmet Burger Truck
Here is our typical weekly when we're in regular truck season:
·200 pounds of beef (total weight after trimming and grinding)
·480 buns
·5 pounds of lettuce
·9 pounds of onions
·15 pounds of tomatoes
·3 pounds of pork belly
·4 pounds of bacon
·10 pounds cheese
·42 ounces of habanero jam
·30 ounces of apricot jam
·32 ounces ketchup
·24 ounces mustard
·70 packets of mayo
·30 ounces of signature smoked ketchup
·50 pounds of propane
·50 veggie burgers (housemade—didn't break down ingredients)
Black Rock Grille
On a decent week (including lunch and weekend events), it goes through
·200 pounds of ground beef
·500 burger buns
·3 gallons of ketchup
Holy Grale
These numbers came from a busy week in December of last year. From Dec. 11-17, Holy Grale sold 146 burgers. That's about 21 a day during the hours of 5-11 p.m. For the ingredient breakdown:
·146 pretzel rolls
·127 pounds of beef
·18 pounds of caramelized onions
·9 pounds of arugula
·18 pounds of cheddar
·9 pounds of frijte sauce
Proof
·Approx. 200 pounds of bison=400 burgers a week=400 buns (average)
·6.25 gallons of 'jezabel' sauce
·30 pounds of Tillamook cheddar
·Approx. 300 pounds of potatoes for fries
