Susan Hershberg's Wiltshire empire is growing: first a catering company, then a restaurant and soon the Wiltshire Pantry Bakery and Café. Set to open at the former home of Joe Davola's (901 Barrett Avenue), Hershberg told Food & Dining Magazine, "We will be offering an extensive selection of breakfast pastries, artisan breads and brioche as well as light breakfast and lunch fare. We will concentrate on 'grab and go' menu items as seating will be very limited. Our catering team, under executive Chef Casey Broussard, will be preparing a selection of soups, salads and sandwiches as well as breakfast entrees."
According to Insider Louisville, "Hershberg said she anticipates cafe hours being 7:00 a.m. or 8:00 a.m. to 3:00 p.m. The cafe may offer box lunches to go during Derby and will likely open shortly thereafter."
