"We're surprised at how much you can grow here in the winter," Mayan Cafe Chef Bruce Ucan told Eater as he prepared for Foxhollow Farm's first Wheelbarrow to Table Dinner of 2014, to be held on January 18. Ucan said he has not yet checked whether the recent deep freeze affected his menu plans (which Foxhollow advises are "Subject to change based on crop"). Expecting only "potatoes, potatoes, some radish and carrots," Ucan has worked up the outlines of four courses including beef mole, salad with lime-ginger vinaigrette and "something chocolate." All four courses will be paired with an organic and/or biodynamic wine. The Foxhollow site notes the dinner will also celebrate "the 8th Anniversary of the Mayan Cafe!"
