Phil Goldsborough and Rick Torres of Longshot Lobsta get some love from Insider Louisville's Kevin Gibson. Goldsborough, formerly owner of Longshot's Tavern in Clifton, and Torres, the former proprietor of Alameda, now sling lobster rolls from a truck designed in children's chalk on a garage floor. The pair want to keep the truck's menu simple, but are planning "to add oysters on the halfshell, shrimp cocktails and possibly grouper bites in March." [Insider Louisville]
