Edward Lee On Taking Dessert Away From Dessert Wine

Edward Lee, who will debut a new tasting menu at 610 Magnolia's wine studio on January 31, says one of the innovations will be a separation between the dessert course and a dessert wine. Lee says he finds the traditional method of pairing sweet wines with a sweet dessert "to be troublesome, because you're serving sweet on top of sweet. There's no counterpoint to it." The 610 chef/owner said he "wanted to separate out" this "double jolt of sweetness." Lee told Eater that he believes "dessert, more than savory courses, can stand on its own," so instead of pairing "we're serving you dessert first … and then we will serve you dessert wine."
