"I am only a continuation of what Eddie Garber started in 1978," Edward Lee said recently about the upcoming January 31 reformat and redesign of his flagship restaurant's menu. Lee added "the philosophy of 610 Magnolia even from its very inception was be different, to push the envelope and to never rest on your laurels." Lee was referring to 610 founder/chef Ed Garber, who gained a national reputation for the restaurant with an eclectic menu and idiosyncratic attitude before handing the restaurant over to Lee in 2003. "I feel responsible for what some would consider to be an institution in Louisville," Lee said, "and I don't want to just sit there and rest on my laurels and go "OK, It's great menu, let's run with it for 10 years and not change anything."
