Starchefs.com presented awards to its 2014 Kentucky-Tennessee "Rising Stars" at the Muhammad Ali Center Tuesday night. Honorees included local stars such as Annie Pettry of Decca, Susie Hoyt of The Silver Dollar, Sam Cruz and Jerry Gnagy of Against The Grain Brewery, James Tooill of Argo Sons Coffee, Julie Defriend of The Oakroom and Jay Denham of The Curehouse. After they received their awards, the stars retreated upstairs to feed the audience, who voted on which chef would receive the final honor of a Jade Range as their favorite. Once the votes were counted, the Jade Range winner was Star Chef honoree Levon Wallace, who coincidentally currently appears in an ad for the company in Starchefs.com Winter 2014 issue. Wallace's winning dish was an Australian Wagyu beef carpaccio with mushrooms, nasturtiums and pickled squash. Stephanie Greene of 21c told Eater that Wallace's carpaccio has been on Proof's menu with bison, but "tonight it will switch from bison to Australian Wagyu."
