Chef Tim Love was the Bon Appétit "ambassador" for this year'sTaste of Derby. Chef/owner of Texas restaurants Lonesome Dove Western Bistro, Woodshed Smokehouse, Love Shack, Queenie's Steakhouse and White Elephant Saloon, Love is known for his "Urban Western" approach. Love told Eater "Urban Western" is about "pioneering, discovering new things" using "ingredients west of the Mississippi," which fortunately for Love stretches all the way to Australia. Serving lamb chops with yuzu aioli to 2000 people was "pretty hairy" and "intense," said Love, but he seemed happy to have survived and to be at his first Kentucky Derby. The chef told Eater he'd eaten at Edward Lee's Milkwood, where he found the kimchi collard greens "amazing." He also enjoyed "sausages and stuff" from "all those dudes with their homemade grills" on Central Avenue. When Eater asked Chef Love (pictured above with julep-holding Alison Roman of Bon Appétit Magazine) if he had sampled a mint julep, he said "I'm drinking bourbon and water. I started with a mint julep, but there's a lot of sugar in it. I'm kind of a savory person, so one was enough."
