Matt McMahan of Big Four Burgers + Beer says he has "fallen in love with the restaurant business" and is now working on a new concept in Sellersburg called "Charlie Noble's Eatery and Draught House," which will be on Highway 311 in Sellersburg. MacMahan told Insider Louisville's Kevin Gibson the concept "will be 'Margaritaville' meets Cheeseburger in Paradise.'" The menu will feature at least six burgers familiar to Big Four diners, but Chef Charlie Starcher says the menu will also have "touches of Mexican cuisine along with Pacific Rim, Cuban and Caribbean influences." MacMahan promises Parrotheads "a signature margarita or two" as well, along with tequilas, beer and "a laid-back party atmosphere." Macmahan hopes the building, painted parrot-green, blue and yellow, will be open by Labor Day.
