Last seen at The Place Downstairs before it changed to Cena, Chef Ethan Ray indicates he's returning to Louisville as part of the kitchen crew of Roux, the New Orleans-themed restaurant replacing Le Gallo Rosso. This came as a comment to an initial Facebook post Ray put up saying he will be "moving back to town mid next month" seeking "a full time job at reasonable pay ... starting in 5 weeks or so." Dustin Staggers of The Monkey Wrench and his brother Kyle have signed a 5-year lease for the Bardstown Road space. In his comment the former Oakroom and Proof on Main pastry chef writes that "even if something else comes up, I'll be damned if I don't come up with a perfect beignet for them regardless."
UPDATE: Ethan Ray wrote Eater to say his role at Roux will be "a part-time thing pretty much only making their beignets...really more of a close friend helping another out ... definitely not newsworthy."
