The space made by Troy Schuster's resignation from the 211 Clover Lane kitchen has been filled by Allen Heintzman. According to Food & Dining Magazine, Heintzman has had a presence in Louisville since he appeared at Artemisia. Since that restaurant shuttered, he has held positions as chef de cuisine at Basa and sous chef at Relish. Heintzman told F&D that 211's persona "is perfect for my style of cooking," adding that he plans to cook with fresh local ingredients and that owner Andrew Smith "has given me the freedom that, if something great comes in in the morning, I can change [the menu] for that evening."
